Gingerbread bicuits.
A lovely gingerbread biscuit recipe that tastes great. Kids can have lots of fun cutting out different shaped biscuits and decorating them.
You could use different themed cutters for special occasions such as Easter or valentines day.
Method
- Pre-heat the oven to 180C/350F/Gas 4
- Mix the flour, bicarbonate of soda, ginger and salt into a bowl
- Chop the butter into small chunks & then rub it into the mixture until everything resembles fine breadcrumbs
- Stir in the sugar
- Beat together the egg and golden syrup and mix into the flour mixture to make a smooth dough,kneading lightly with your hands.
- Sprinkle a little bit of flour onto a clean work surface and roll out the dough until about 1/2cm (1/4in) thick, then cut into shapes using a selection of cookie cutters. You should get about 20-25 biscuits dependant on which shapes you use
- Transfer the biscuits onto baking trays. Leave room between each biscuit on the tray
- Bake for 11-12 minutes until golden brown
- Gently lift the biscuits onto a wire rack with a palette knife to finish cooling.
- Decorate with icing or anything else such as little sweets to make them look nice
