Fig Loaf

This sticky fig cake is high in fibre and so easy to make. No skill necessary, just put everything together in a bowl and bake. Delicious. It’s so easy that kids can cook it with the greatest of ease.

Method

  1. Pre-heat the oven to gas mark 4 / 180C / 350F
  2. Put the bran flakes, sugar, figs, black treacle & skimmed milk into a bowl. Mix together well & leave to stand for ½ hour
  3. Add the flour & mix well
  4. Put the mixture into a loaf tin & bake for 50 minutes
  5. Leave in tin to cool for 10 minutes. Turn out onto a wire rack

Ingredients

    • 125g / 4oz bran flakes or All Bran
    • 125g / 4oz dark soft brown sugar
    • 125g/ 4oz dried figs, chopped
    • 2 teaspoons black treacle
    • 300ml / ½ pint skimmed milk
    • 125g / 4oz wholemeal self-raising flour
